BGT 6/17

Bacon Cheeseburger Cupcakes

These were probably my favorite BGT of all time, mostly because it came out so nicely and they were SUCH a big hit!  They did take forever to make, though, and I enlisted my mother and my sister to help me put them together. 

Ingredients:
1 batch vanilla cupcakes
1 batch chocolate cupcakes, tops cut off
Red icing
Fruit Roll Ups/Fruit by the Foot (red/orange and yellow, hopefully)
Coconut
Green food coloring
Sesame seeds

After baking the cupcakes, let them cool thoroughly.  Don't cut them yet or they will likely crumble!  This was tough for me because I was impatient and wanted to get moving. 
In the meantime,  put coconut in a bowl with green food coloring and swoosh around until it's covered.
Cut up the fruit roll ups or fruit by the foot into small pieces.  (I ran out of red and yellow, so I just stuck a square under opposite sides of the chocolate cupcake and stuck a little beneath the red frosting. More on that later.)
Get your icing ready to go.  I used the kind in the can because it was easier to write with.

Once the cupcakes are done cooling, cut all of  the vanilla cupcakes in half. If they're on the bigger side, trim as close to the top of the cupcake as you can and leave the rest for the bottom, or trim a little off that too. It's up to you. 
Then, cut the tops off the chocolate cupcakes.  Luckily, I had a lot of neighborhood kids running around that day, so I left the topless cupcakes on a tray outside and they were devoured within a matter of minutes.
Take the bottoms of the vanilla cupcakes and place them side by side on a flat surface.  Put a strip/square of fruit roll up/fruit by the foot on top of it.  I ran out of red, so instead of having a piece span the diameter of the cupcake, I just used two squares to stick out.
Then, place the chocolate top on top of that.  Place yellow squares on top of that (again, I only used little pieces in order to have enough "cheese" to go around.
Next comes the red icing - make a circle around the chocolate bun.  You don't need to fill it in (unless you want to), but be generous in your circle size so that you can see the "ketchup" after you've placed the bun. 
Place the coconut in the center of your ketchup-icing circle, with enough overflowing to stick out.
Carefully place the vanilla top on top, sprinkle some sesame seeds on top, and you're done!

I had originally tried to do them one by one - way too time consuming.  If you do an assembly line, it goes much quicker.
