Yogurt Pie
This might be the simplest pie ever. It's a great addition to a dessert table, and you can easily make it low-calorie and low-fat if you want to keep it in the freezer all to yourself.
1 pie crust (I used graham cracker, but Oreo pie crusts taste delicious too!)
2 containers of yogurt
1 tub fat free cool whip, thawed
I use Dannon Light & Fit Vanilla, but you can use whatever you want. Just
keep in mind that using light/fat free will make it healthier if you
feel the need to OD on the pie.. not that I ever have.. ha! You can
also go crazy with the flavors. My mom uses Weight Watchers Amaretto
Cheesecake and it is equally as delicious. My grandma often uses a key
lime mixed with a vanilla for a hint of flavor. I've never tried using Greek yogurt in this recipe, so I can't speak to that.
In a mixing bowl, combine the 2 containers of yogurt and fold in the cool whip until it's [insert Elvis voice] all mixed up. Carefully fold it into the pie crust and then pop it into the freezer until frozen. (Usually about 3-4 hours.) As an alternative, if you wanted to eat this right away, go for it. You don't have to eat it frozen, but I find it has a nice taste and texture that way.
Enjoy!
