Cucumbers with Cheese Dip

I learned a recipe similar to this a long, long time ago, but I forgot it.  I had a lonely cucumber sitting in my fridge and I was tired of ranch dressing (shocking, I know) and I was fresh out of hummus.

But I did happen to have these ingredients on hand, so I figured I'd whip up something quick to top my cucumbers with.  I love this recipe because you can really use it on anything, but it goes so well with veggies that it makes me crave them.  Which is fabulous, because my alternative was greasy potato chips.

What you'll need:

  • Fat free sour cream
  • Fat free cream cheese
  • Reduced fat crumbled feta cheese
  • Yellow onion, finely minced (or white... when it comes to onions I usually use what I have in the fridge)
  • Scallions
  • Ground black pepper
  • Cayenne pepper
I didn't measure out the ingredients, but if I had, I'd say 1 tablespoon cream cheese to 2 tablespoons sour cream and a handful of feta cheese.  I like my dips to have strong flavors, so I added a lot of scallions and onions.  Sprinkle some of each pepper onto the dip and mix until thoroughly blended.

I don't have a picture of the final product, but I cut the cucumber into 1/4 - 1/2 inch slices and put a dab of the dip right on top.
