Tonight for dinner, I had precooked chicken, but it was staring back at me begging for some kind of fix-me-up. Who am I to disappoint? I started pulling ingredients out with lightening speed (I was starving!) and came up with this recipe. If I'd thought of it, I would have marinated the chicken in this mix while I was at work and then dipped it in the "breadcrumbs." But I didn't, and it was good anyway.
Marinade (I didn't have a lot of chicken to work with, but if you're making this a meal, just make sure it's 2:1 Worcestershire sauce to soy sauce)
4 tbsp Worcestershire sauce
2 tbsp soy sauce
1/2 tbsp lemon juice
Breadcrumbs:
Cornstarch
Garlic powder
Onion powder
Parmesan cheese
Dip the chicken into the marinade and then coat in the breadcrumbs. Put on a pan and bake this for about 10 minutes or until hot. (Again... if you're not using precooked chicken, adjust the time accordingly.) Ta-da! Simple, easy, and delicious!
