Crock Pot Buffalo Chicken Lettuce Wraps


I originally saw this pin on Pinterest for buffalo chicken lettuce wraps, and I am a sucker for all things buffalo chicken.  It stuck out to me because I never thought of using lettuce instead of a wrap, and being on the healthy food kick that I am, I fell in love with the idea.  That, and you can use a slow cooker for the chicken, and I am a slave to my crock pot.  So I decided to try to make them.. and naturally, adapted the recipe until it was pretty different from the original. 

Also, just a note: I made this at work.  That's how simple it is to assemble.  I (obviously) cooked the chicken ahead of time, brought in all of the ingredients, and voila! An easy office lunch. 

Ingredients for slow cooker buffalo chicken:
Chicken (I used Perdue Shortcuts Honey Roasted chicken)
Scallions
Hot sauce
1 cup of chicken broth or water with chicken bouillon

Ingredients for wrap:
Romaine Lettuce
Broccoli Slaw
Avocado
Red Onions
Reduced Fat Shredded Mexican Cheese
FF Ranch Dressing

Directions for slow-cooker chicken:
Put chicken in crock pot.  
Throw about a cup of chicken broth in there (or in my case, because I was fresh out, I used about a cup of water and a chicken bouillon cube), as much hot sauce as you can take (I used probably about 3-4 tablespoons, maybe more), cut up some scallions, cover.
Let the magic happen for about 2-3 hours.  I used precooked chicken, because I depend on it to make life a little easier. If you're using raw chicken, adjust the time accordingly.

For the wrap:
Place lettuce on a plate.  Place/spread avocado on the wrap, followed by the broccoli slaw, onions, chicken*, cheese, and then drizzle the ranch dressing over it.

* I used the slow cooker method for the buffalo chicken, but if you wanted to, you could use chicken breasts covered in hot sauce.  I think it'd have the same general taste.  The chicken was a little more shredded this way, so it was easier to eat, and the flavor cooked all the way through.  It's your world!
