Everything-but-the-kitchen-sink salad

It started out with an iceberg salad mix from a bag - lettuce, carrots, red cabbage.  That was too plain.  I looked in my lunchbox and it just so happened that I had a ton of stuff left over.  Being that it was Thursday, I decided to throw it all on my salad.  This is what resulted: a ginormous (very filling) salad that warranted comments from nearby coworkers.  And yes... I ate every last bite.


What's inside:
Iceberg salad mix with carrots and red cabbage
Red Onions
Jalapenos
Black Beans
Corn
Cucumbers
Avocado
Feta Cheese
Chicken with Tabasco Chipotle Sauce
Quinoa
Stop & Shop Light Ranch Dressing

Needless to say, I didn't exactly measure this one out.  If I HAD to guess, I'd say that there was about 1/3 bag of the salad mix, 2 tbsp diced red onions, 1 tbsp diced jalapenos, 1/4 cup each of black beans, corn, and cucumbers, 1/2 medium avocado, 1 tbsp fat free feta, 2 oz chicken (this I know for sure because I portion out my chicken), 1/4 cup quinoa, and 2 tbsp of light ranch dressing (okay... this might be closer to 3).


Mix together, drizzle the dressing, and serve.
