Sweet Potato & Quinoa Salad

It was late.  I was hungry.  I didn't have that much on hand.  And this is what happened:


It is a concoction that I am at a loss to even name.  But here's how it goes:

1 medium sweet potato
Garlic Powder
Onion Powder
Black Pepper
1/2 c quinoa
1/2 avocado
Scallions (probably about 2 tbsp)
2 tbsp fat free feta cheese

First, take the sweet potato and dice it up nicely.  In true Kristina fashion, I cut mine up into itsy-bitsy pieces.  I sprayed them with Pam until they started to fry, then I drizzed a little EVOO, and generously sprinkled garlic powder, onion powder, and black pepper on top.  They burned slightly, and I am not a fan of that taste, but I digress.

I took those babies and put them in a bowl.  I added quinoa, then diced up an avocado, and realized it was missing something.  So I added scallions for a cool, crisp flavor.  It was still missing something, so I dug around in my fridge and found the feta cheese.  I mixed that in and voila! There you have it.
